Lagane e ceci
A traditional dish made with lagane, a distinctive wide pasta in a sauce made of chickpeas, garlic, olive oil, and a pinch of chili pepper.

Pizza Fritta Cilentana
Cilentana Fried Pizza is made from pizza dough that is deep-fried and topped with pre-cooked tomato sauce and goat cheese.

Soppressata
A cured meat made by finely chopping pork and mixing it with salt, pepper, and a small amount of fat. The mixture is then stuffed into natural pork casing and hand-tied with string.

Pizza Cilentana
Pizza Cilentana is made using bread dough, topped with datterino tomato sauce, previously cooked with a sauté of garlic and onion in olive oil and nd finished with goat cheese.

Cicciata
A hearty soup made from legumes and grains, each cooked separately before being combined and blended together. Ingredients include chickpeas, grass peas, beans, wheat, peas, lentils, corn, and fava beans.

Taralli cu' naspro
The sugar glaze that covers these cookies is called Naspro. This glaze is made from cooked sugar, which hardens and turns white and firm as it cools. In addition to sweetening the taralli, it also acts as a protective coating that prevents moisture from escaping the cookies.

Fico con la cioccolata
White figs are left to dry in the sun, then baked in the oven. Once cooked, they are finely chopped and flavored with lemon zest, wild fennel, and chopped almonds. The mixture is shaped into small balls, which are then coated in dark chocolate.

Fico 'mbaccate
White figs are sun-dried, then carefully split in half without cutting the stem. On one half, a whole almond (or walnut) is placed, while the other half is topped with lemon zest and wild fennel. Next comes the ‘mbaccatura process: the half with the nut is joined to the half with the lemon and fennel, and the pairs are skewered together, alternating with bay leaves, then pressed firmly. This is what’s called being ‘mbaccati. Finally, the stuffed figs are baked in the oven.
